The art gallery plate.
One of our first projects for Frevo - a New York “concept gravitating around creative food and art” - was this very custom version of our Fancy 25 plate. Chef Franco sent us some input in the form of pictures and this sentence: “The idea is to spray the dish without any mold. Like you are spraying the wall with no shape in mind.”
Well, we got to work and we sprayed some plates with no shape in mind. It took a few rounds of testing, turned out that having no shape in mind does not mean that what comes out is necessarily the right thing - or the right colour - but we got there in the end, as we usually do. And as so often before, we were stunned to see the result put to use in the restaurant.
