Volcanic chawanmushi pots.
Michelin star restaurant Mana in Manchester (UK) wanted a bowl with a lid with a rough texture on the outside - “almost like a volcanic rock”. The inside is smooth so that the custard cooks evenly and comes out of the bowl nicely with a spoon.
The chawanmushi pots are made from a rough black clay which gives a characteristic volcanic rock look.
The pots are shaped around a plaster mould to give them a consistent shape and size and to make sure the lid fits nicely in the bowl.
